Recipe of the week

I forgot to post a recipe on monday so sorry this is late! I thought since we just had Thanksgiving, everyone would have lots of turkey and stuffing left so here's a recipe to use it up! Enjoy

Turkey and stuffing Casserole
3 cups cooked and diced turkey
2 cups water
2 chicken bullion cubes
1 8 oz cream cheese
6 T flour
1/2 cup water
2 boxes prepared stuffing

In a saucepan put water and bullion and bring to a boil. Mix the flour and and other water and add to the bullion mix. Reduce the heat to medium and add the cream cheese till it melts. In a 9x13 inch pan layer the turkey, stuffing and sauce. You should have enough to do 2 layers. Then put it in the oven on 350 for 30 minutes. You can use lowfat cream cheese and whole wheat stuffing and it makes it healthier for you. I hope you enjoy!

Recipe of the week

Pear Salad

1 quart of pears
1 8oz cream cheese softened
1 small box of lime jello
1 8oz cool whip

Drain juice from pears and heat till boiling. If you dont have 1 cup of juice you can add water to make up the difference. Add the jello to the juice and stir till dissolved, put in the fridge till slightly set up. Take the pkg of cream cheese and the pears and put in the blender till blended then add the jello. Pour into a bowl and fold in the cool whip then refridgerate till set up.

This is one of my favorites that my mom makes. I hope you will all enjoy it as much as I do!

Recipe of the week

Banana Salad

2 small boxes of banana pudding
1 small carton sour cream
1 large can fruit cocktail drained
1 can mandarin oranges drained
1/2 cup coconut
1 small can pineapple tidbits
2 bananas sliced
1 medium carton whip cream
Mix everything together and let it refridgerate 2 hours before serving. Enjoy!

Leftover brownies

Maya and I called them leftover tonight, because we put in the oven whatever is leftover from the batch :)

2 stick unsalted butter
1/2 c semi-sweet or bitter sweet chocolate chips (we pick the ones that advertise high coca content)
2 eggs
1.5 c sugar
1.3 c extra dark cocoa (Hershey's)
2/3 c flour
splash of vanilla extract
dash of salt

Melt butter with chocolate chips in a sauce pan. Meanwhile combine eggs with sugar, vanilla and salt. Mix the cocoa in. When butter mixture is all melter, pour slowly into egg mixture while stirring everything. Add flour and mix. Pour into greased pan and bake at 325F for 20-25 mins.

I have to stress that the extra dark cocoa and bitter sweet chocolate chips make all the difference for us :)

Recipe of the week

Taco Salad

1 pound ground beef cooked
1 head of lettuce
tomato
cheese
1 can sliced olives drained
1 can of kidney beans rinsed
1 small bottle french dressing
1 small bottle italian dressing
1 bag of doritos

Toss everything but the dressings and the doritos together. Then right before serving add the doritos and dressing and serve.
